Herb-Roasted Red Potatoes


These are roasted potatoes at their best.  Bold and savory, they won't disappoint.








Herb-Roasted Red Potatoes
  • 1 tablespoon butter, melted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 3/4 teaspoon basil
  • 3/4 teaspoon oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 large red potatoes, unpeeled
  • 1/4 cup parmesan cheese, grated or shaved
Combine all ingredients except potatoes.  When adding the dried herbs, rub them between your palms to release their natural oils and achieve maximum flavor.  Cut the potatoes into wedges and add to the oil mixture.  Toss to coat, then stand on edge on a baking sheet and sprinkle the parmesan cheese over the potatoes. 

Bake 30 minutes at 425 degrees until golden brown.
