Chopped Broccoli Salad

Chopped Broccoli Salad

Need a new salad recipe to whip out for the forthcoming Thanksgiving festivities?

Then lucky you.  I have just the thing.

Chopped Broccoli Salad

I consider this a bona fide winter salad, since the ingredients are tasty and available year-round.  Though broccoli may not pop into your mind as the most auspicious of vegetables, I can wholeheartedly recommend this salad as a family favorite and crowd pleaser.

Chopped Broccoli Salad

Fresh crunchy broccoli, smokey bacon, cranberries that lend both tart and sweet, sunflower seed nuttiness and a couldn't-be-easier light creamy dressing.  Try this one, you'll be mighty thankful you did.

2 heads broccoli, chopped
1/2 cup bacon, cooked and crumbled
1/2 cup sunflower seeds
1/2 cup dried cranberries

Dressing:
1 cup mayonnaise
1/4 cup sugar
1 tablespoon apple cider vinegar

Combine the prepared broccoli, bacon, sunflower seeds and cranberries in a large bowl, set aside.

In a small bowl whisk together the dressing ingredients, pour over the salad and gently stir until everything is nicely coated.

Chill for at least an hour before serving.  Enjoy!
