Monster Meatloaf


These tasty Halloween-worthy meaty monsters will delight your little ghouls, and in truth I'll divulge that the Daddy Ghoul enjoyed them most.  Be warned: while making these bad boys you will be unable to withhold maniacal laughter and the occasional outburst of "It's Alive"!




Monster Meatloaf
  • 2 lbs. lean ground beef
  • 1 small onion, finely chopped
  • 2/3 cup instant oatmeal
  • 2 large eggs
  • 3/4 cup ketchup
  • 1/2 cup milk
  • 2 Tbs. Worcestershire sauce
  • 1 tsp. salt
Glaze:
  • 1/3 cup ketchup
  • 3 Tbs. brown sugar
Face decorations:
  • carrots- for the hair
  • mozzarella cheese stick- slice off circle shapes for the whites of the eyes
  • olives- black part of the eyes
  • potato- cut into little squares for the teeth

Preheat oven to 375 degrees F.  In a large bowl mix meatloaf ingredients together with your hands.  Divide meat mixture into 8 servings and shape into individual loaves.  Place on a greased baking pan. 

In a small bowl whisk together ketchup and brown sugar.  Brush tops and sides of meat loaves, using all the glaze.  Use your fingers to make the facial indentations; eyes, nostrils, and mouth.

Bake for 35-40 minutes.  I always check the internal temperature with a meat thermometer- 170 degrees is well done.  Remove from the oven and immediately decorate your creations.
