Tomato Corn Salad

I finally got around to giving this recipe a photo makeover, so I've pulled it to the front because it definitely deserves a second look.




Absolutely one of my family's favorite salads, like ever.

Seriously, turn on your printer.


This colorful side bursts with refreshing pizazz.   Laced with fresh herbs, balsamic vinegar and Dijon mustard, its a winner.




Tomato Corn Salad

• 3 large tomatoes, chopped 
• 1 small red onion, thinly sliced 
• 1/3 cup chopped green onions 
• 1/4 cup balsamic vinegar 
• 3 tablespoons minced fresh basil (or 1/2 tablespoon dried) 
• 1 tablespoon cilantro, minced
• 1 teaspoon salt 
• 1/2 teaspoon pepper 

• 4 cups fresh corn (frozen works great too) 
• 2 tablespoons olive oil 
• 3 garlic cloves, minced
• 1 tablespoon Dijon mustard 


Combine the first eight ingredients in a large bowl, gently stir. In a large skillet, saute corn in oil until tender. Add garlic, cook 1 minute longer, stir in mustard.  Add to vegetable mixture, toss to coat.  Serve with a slotted spoon. Yield: 7 servings.
