Vanilla Buttercream and Doctored Cake Mix

Oh Buttercream.  Thank you for being so flawlessly easy to whip up and so sinfully perfect.  I shan't ever open a can of store-bought frosting again.  

You surpassed my every expectation.  

But there's more!  My lovely Mom-in-law Charlyn--who has loads of cupcake wisdom--shared with me the secret to achieving wonderfully moist, flavorful cake from a box.  

Mayonnaise!  Who knew?!


Vanilla Buttercream

  • 1 lb butter, softened
  • 7-8 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 4-6  tablespoons milk


In a large mixing bowl cream butter until smooth, on med-low speed approximately 1 minute using a paddle attachment.

Add 4 cups of powdered sugar, then add 1 cup at a time, mixing between additions until well combined.

Add vanilla, mix until combined.  Add milk, a tablespoon at a time until desired consistency is reached.  Frosting should be smooth and soft, yet hold its shape.

This will frost 24 cupcakes (piped on) or cover a 2-layer 9-inch round cake. Enjoy!



Doctored Cake Mix

Cake mixes are much more convenient and less time consuming than making cakes from scratch. The mayonnaise makes the cake wonderfully moist and you cannot taste it at all.  Since mayonnaise is made with eggs and oil, there is no need to add oil to the mix and it uses less eggs.

  • Instead of the 3 large eggs that the directions on the box call for, only use 2.
  • Omit the oil, add 1 cup of Mayo.
  • Add the water as called for on the box and bake as directed.
